Zucchini Chickpea Burgers

Ingredients
- chickpeas cooked
- 2 2/3 cup
- red onion finely diced
- 2/3 medium
- zucchini grated
- 1 1/3 medium
- lemon juice fresh
- 4 tbsp
- lemon zest
- 1 1/3 tsp
- tahini
- 4 tbsp
- quick oats
- 1 1/3 cup
- olive oil
- 2 2/3 tsp
- Dijon mustard
- 1 1/3 tbsp
- Frank's Red Hot Sauce
- 1 1/3 tbsp
- salt
- 1 1/3 tsp
- garlic powder
- 2 2/3 tsp
- onion powder
- 1 1/3 tsp
Method
- 01Mash chickpeas in a bowl with a fork until mostly broken down but still chunky.
- 02Add red onion, zucchini, lemon juice, lemon zest, tahini, oats, olive oil, mustard, hot sauce, salt, garlic powder, and onion powder. Mix well.
- 03Form mixture into 9 patties with your hands. Add more oats 1 tbsp at a time if too wet.
- 04Lightly spray a non-stick skillet with cooking oil and heat over medium heat.
- 05Cook burgers 10 minutes per side until crisp and firm.
