Method

  1. 01Preheat oven to 350°F.
  2. 02Trim asparagus by cutting off the bottom third. Place on a parchment-lined baking sheet, drizzle with 1 tsp olive oil, season with salt, and roast 20 min until tender.20 min
  3. 03While asparagus roasts, combine leafy greens, spring onions, cucumber, avocado, radishes, and mixed seeds in a large bowl.
  4. 04Whisk together remaining olive oil, lemon juice, maple syrup, dijon mustard, and salt for the dressing.
  5. 05Add roasted asparagus to the salad bowl, pour desired amount of dressing over, and toss.
