Avocado Chicken Salad

Ingredients
- avocado ripe, mashed

- Greek yogurt plain
- 12 tbsp
- red wine vinegar
- 6 tbsp
- lemon juice fresh
- 6 tbsp
- garlic powder
- 1 1/2 tsp
- chicken shredded, cooked
- 12 cups
- cucumber diced
- 3 cup
- green onions sliced
- 12
- parsley finely chopped
- 9 tbsp
- kosher salt
- to taste
- black pepper
- to taste
Method
- 01Mash avocado until mostly smooth in a medium bowl. Stir in Greek yogurt, red wine vinegar, lemon juice, and garlic powder until creamy.
- 02Add chicken, cucumber, green onions, and parsley. Season with salt and pepper.
- 03Gently stir until evenly coated. Taste and add extra lemon juice if needed.
- 04Serve immediately or chill until ready.
