Ingredients

avocado ripe, mashed
3 large
Greek yogurt plain
6 tbsp
red wine vinegar
3 tbsp
lemon juice fresh
3 tbsp
garlic powder
3/4 tsp
chicken shredded, cooked
6 cups
cucumber diced
1 1/2 cup
green onions sliced
6
parsley finely chopped
4 1/2 tbsp
kosher salt
to taste
black pepper
to taste

Method

  1. 01Mash avocado until mostly smooth in a medium bowl. Stir in Greek yogurt, red wine vinegar, lemon juice, and garlic powder until creamy.
  2. 02Add chicken, cucumber, green onions, and parsley. Season with salt and pepper.
  3. 03Gently stir until evenly coated. Taste and add extra lemon juice if needed.
  4. 04Serve immediately or chill until ready.
