3/8 cup
cashews unsalted, unroasted
5/8 cup
puffed rice cereal
0.2 cup
dried blueberries
1/3 cup
brown rice syrup
1/8 cup
lemon zest
3/8 tsp
vanilla extract
5/8 tsp
sea salt

Method

  1. 01Preheat oven to 325°F.
  2. 02Spread almonds and cashews on a rimmed sheet pan and bake 5-8 minutes until fragrant and lightly browned.8 min
  3. 03Grease and line an 8x8-inch pan with parchment paper.
  4. 04Combine toasted nuts, puffed rice, and dried blueberries in a large bowl and toss.
  5. 05Microwave brown rice syrup and lemon zest for 30 seconds. Whisk in vanilla and salt until combined, then pour over nut mixture and stir until evenly coated.
  6. 06Transfer nut mixture to prepared pan and press into an even layer.
  7. 07Bake 18-20 minutes. Cool 30 minutes, then transfer to a cutting board.50 min
