Ingredients

- 5/8 cup
- cashews unsalted, unroasted
- 7/8 cup
- puffed rice cereal
- 1/3 cup
- dried blueberries
- 0.45 cup
- brown rice syrup
- 1/8 cup
- lemon zest
- 5/8 tsp
- vanilla extract
- 7/8 tsp
- sea salt
- 1/3 tsp
Method
- 01Preheat oven to 325°F.
- 02Spread almonds and cashews on a rimmed sheet pan and bake 5-8 minutes until fragrant and lightly browned.8 min
- 03Grease and line an 8x8-inch pan with parchment paper.
- 04Combine toasted nuts, puffed rice, and dried blueberries in a large bowl and toss.
- 05Microwave brown rice syrup and lemon zest for 30 seconds. Whisk in vanilla and salt until combined, then pour over nut mixture and stir until evenly coated.
- 06Transfer nut mixture to prepared pan and press into an even layer.
- 07Bake 18-20 minutes. Cool 30 minutes, then transfer to a cutting board.50 min
