Instant Pot Pumpkin Curry

Ingredients
- pumpkin peeled and cubed
- 1 1/3 cup
- sweet potato peeled and cubed
- 1/3 cup
- red lentils rinsed and drained
- 0.17 cup
- yellow onion diced

- garlic minced
- 1 clove
- fresh ginger peeled and grated
- 2/3 tbsp
- green chiles deseeded
- 1
- light coconut milk
- 1/3 can
- tomato paste
- 2/3 tbsp
- ground coriander
- 1/3 tbsp
- ground turmeric
- 1/3 tbsp
- ground cumin
- 1/3 tbsp
- salt
- 1/3 tsp
- water
- 2/3 cup
Method
- 01Add pumpkin, sweet potato, lentils, onion, garlic, ginger, chiles, coconut milk, tomato paste, coriander, turmeric, cumin, salt, and water to Instant Pot. Stir.
- 02Pressure cook on high for 4 minutes. Allow pot to come to pressure naturally.
- 03Quick release pressure. Carefully open lid.
- 04Stir curry and adjust salt and pepper to taste. Serve hot with rice.
