Sprouted Lentil Chipotle Chili

- chipotle in adobo

Method
- 01Cook sprouted lentils according to package directions.
- 02Heat avocado oil in a large pot on medium-high heat.
- 03Add onion, cook 3 minutes until translucent.
- 04Add red pepper, cook 3 minutes on medium heat.
- 05Add garlic, sprouted lentils, and black beans. Cook on low 2-3 minutes.
- 06Add crushed tomatoes, chipotle, chili powder, cumin, salt, pepper, and maple syrup. Stir and bring to a boil on medium-high heat.
- 07Reduce heat to low and simmer 10 minutes.10 min
- 08Serve with fresh cilantro and lime.
