Mexican Pickled Red Onions

Ingredients
- red onions sliced into thin rings
- 1/2 lb
- white vinegar
- 1/2 cup
- water
- 1/2 cup
- salt
- 1/2 tbsp
- sugar
- 1/2 tbsp
- habanero or jalapeño sliced, seeds removed for less heat
- 1
- garlic cloves smashed
- 1
- dried oregano
- 1/4 tsp
Method
- 01Combine vinegar, water, salt, sugar, chile, garlic, and oregano in a saucepan.
- 02Bring to a boil over medium-high heat.
- 03Remove from heat and let cool 2 minutes.
- 04Place onions in a jar or bowl and pour hot brine over them.
- 05Cool to room temperature, then refrigerate at least 1 hour before serving.1 hr
