Mexican Pickled Red Onions

Ingredients

red onions sliced into thin rings
1 lb
white vinegar
1 cup
water
1 cup
salt
1 tbsp
sugar
1 tbsp
habanero or jalapeño sliced, seeds removed for less heat
1
garlic cloves smashed

dried oregano
1/2 tsp

Method

  1. 01Combine vinegar, water, salt, sugar, chile, garlic, and oregano in a saucepan.
  2. 02Bring to a boil over medium-high heat.
  3. 03Remove from heat and let cool 2 minutes.
  4. 04Place onions in a jar or bowl and pour hot brine over them.
  5. 05Cool to room temperature, then refrigerate at least 1 hour before serving.1 hr
