Ingredients

Dijon mustard

lemon juiced
2 lemon
garlic minced
2 clove
Aleppo pepper
2 tsp
sumac
2 tsp
kosher salt to taste
to taste
black pepper to taste

olive oil
1/2 cup
chickpeas drained and rinsed
4 (15 oz) cans
English cucumber chopped
2 large
grape tomatoes halved
4 cups
roasted red peppers seeded and chopped
4 peppers
red onion finely chopped
2 small
parsley chopped
2 cup
mint chopped
1 cup
avocado pitted and roughly chopped
2 avocado

Method

  1. 01Whisk Dijon, lemon juice, garlic, Aleppo pepper, sumac, salt, and pepper in a large bowl.
  2. 02While whisking, drizzle in olive oil until emulsified.
  3. 03Add chickpeas, cucumber, tomatoes, roasted peppers, onion, parsley, and mint to the dressing. Toss gently.
  4. 04Add avocado and toss very gently. Taste and adjust seasoning. Serve immediately.
