Baked Cod with Panko Bread Crumbs

Ingredients
- cod fillets patted dry
- 1 lb
- all-purpose flour
- 1/4 cup
- salt
- 1/2 tsp
- garlic powder
- 1/2 tsp
- black pepper ground
- 1/2 tsp
- paprika
- 1/2 tsp
- Italian seasoning dried
- 1/2 tsp
- eggs
- 1 eggs
- panko breadcrumbs
- 1/2 cup
- parsley dried
- 1/2 tsp
- olive oil
- 1 1/4 tbsp
- parsley chopped fresh
- to taste
- lemon cut into wedges
- 1 lemon
Method
- 01Preheat oven to 400°F.
- 02Pat cod dry with a kitchen towel.
- 03In a shallow bowl, combine flour, salt, garlic powder, pepper, paprika, and Italian seasoning.
- 04In a second shallow bowl, whisk eggs with a splash of water.
- 05In a third shallow bowl, mix panko and dried parsley.
- 06Coat each cod fillet in flour mixture, then dip in egg, then coat in panko mixture, pressing gently to adhere.
- 07Place fillets on a parchment-lined baking sheet, spacing evenly. Drizzle with olive oil and spray tops with cooking spray.
- 08Bake 12-15 minutes until golden brown and cooked through (internal temperature 145°F).14 min
- 09Garnish with fresh parsley and serve with lemon wedges.
