Ingredients

cod fillets patted dry
2 lb
all-purpose flour
1/2 cup
salt
1 tsp
garlic powder
1 tsp
black pepper ground
1 tsp
paprika
1 tsp
Italian seasoning dried
1 tsp
eggs
2 eggs
panko breadcrumbs
1 cup
parsley dried
1 tsp
olive oil
2 1/2 tbsp
parsley chopped fresh
to taste
lemon cut into wedges
1 lemon

Method

  1. 01Preheat oven to 400°F.
  2. 02Pat cod dry with a kitchen towel.
  3. 03In a shallow bowl, combine flour, salt, garlic powder, pepper, paprika, and Italian seasoning.
  4. 04In a second shallow bowl, whisk eggs with a splash of water.
  5. 05In a third shallow bowl, mix panko and dried parsley.
  6. 06Coat each cod fillet in flour mixture, then dip in egg, then coat in panko mixture, pressing gently to adhere.
  7. 07Place fillets on a parchment-lined baking sheet, spacing evenly. Drizzle with olive oil and spray tops with cooking spray.
