Carne Asada Tacos

- olive oil
- 3/4 cup
- lime juice
- 3/4 cup
- garlic
- 18 cloves
- chipotle pepper

- avocado oil

- corn tortillas warm

- jalapeño seeded and diced
- 3
- cotija cheese crumbled
- 1 1/2 cup
- cherry tomatoes diced
- 1 1/2 cup
- lime

Method
- 01Combine olive oil, lime juice, garlic, chipotle pepper, soy sauce, oregano, chili powder, salt, and cumin in a blender. Blend until smooth.
- 02Pour marinade over flank steak, flip several times to coat fully. Marinate at least 2 hours or up to 24 hours.2 hr
- 03Heat a large cast iron skillet to medium high heat.
- 04Add avocado oil to the skillet. Place steak in the hot skillet and cook 4-5 minutes undisturbed until seared.5 min
- 05Flip steak and cook another 4-5 minutes. Remove from heat and rest 5-10 minutes.8 min
- 06While steak rests, warm tortillas in a skillet, grill, or pan.
- 07Assemble tacos with steak, tortillas, cilantro, cotija, jalapeño, tomatoes, and lime.5 min
