flank steak

olive oil

lime juice
1/2 cup
garlic

avocado oil

corn tortillas warm

jalapeño seeded and diced

cotija cheese crumbled
1 cup
cherry tomatoes diced
1 cup
lime

Method

  1. 01Combine olive oil, lime juice, garlic, chipotle pepper, soy sauce, oregano, chili powder, salt, and cumin in a blender. Blend until smooth.
  2. 02Pour marinade over flank steak, flip several times to coat fully. Marinate at least 2 hours or up to 24 hours.2 hr
  3. 03Heat a large cast iron skillet to medium high heat.
  4. 04Add avocado oil to the skillet. Place steak in the hot skillet and cook 4-5 minutes undisturbed until seared.5 min
  5. 05Flip steak and cook another 4-5 minutes. Remove from heat and rest 5-10 minutes.8 min
  6. 06While steak rests, warm tortillas in a skillet, grill, or pan.
  7. 07Assemble tacos with steak, tortillas, cilantro, cotija, jalapeño, tomatoes, and lime.5 min
