Potato Omelette

Ingredients

potatoes peeled, diced into 1/2-inch cubes

onion finely diced
1 1/2 medium
eggs

Method

  1. 01Heat olive oil in an oven-safe skillet over medium heat. Cook onion with 1/2 tsp salt until softened, 5-7 minutes.7 min
  2. 02Add potatoes and 1/2 tsp salt. Cook 10-15 minutes, stirring every 5 minutes to crisp all sides. Cover for the last 3-4 minutes to soften.
  3. 03Whisk eggs with parsley, 1/2 tsp salt, and pepper in a bowl.
  4. 04Pour egg mixture evenly over potatoes and onions. Cook on stovetop 3-4 minutes.
  5. 05Transfer skillet to oven and broil 2-3 minutes until set. Alternatively, cover and let steam until eggs set, or flip carefully.3 min
  6. 06Garnish with parsley and serve with bread.
