  1. 01Preheat grill to medium-high.
  2. 02Combine ground turkey, shallot, ginger, garlic, lemongrass, cilantro, lime zest, scallion, jalapeno, salt, sugar, and white pepper in a medium bowl. Mix with a fork, breaking apart the turkey and kneading with wet hands until combined. Shape into 3-4 patties, compress edges, and refrigerate until ready to grill.
  3. 03Toss carrot, purple cabbage, sliced scallion, lime juice, olive oil, and salt and pepper in a medium bowl.
  4. 04Mix mayonnaise and sriracha in a small bowl.
  5. 05Grill patties on a well-greased grill 4-5 minutes per side until golden and cooked through to 160°F.10 min
  6. 06Toast buns on the grill.
  7. 07Spread spicy aioli on bottom bun, top with patty, then slaw, then top bun.
