water cold
2 5/8 cup
salt

olive oil extra virgin

lemon zest and juice

parsley finely chopped

mint finely chopped

chickpeas drained and rinsed

red onion diced

Method

  1. 01In a medium pot, add quinoa, cold water, and a pinch of salt. Cover, bring to a boil, reduce heat to low, and cook for 12 minutes. Let stand covered for 5-10 minutes.20 min
  2. 02In a large salad bowl, whisk together olive oil, lemon zest, lemon juice, parsley, mint, salt, and pepper.
  3. 03Add chickpeas, cucumber, red onion, feta cheese, and pistachios to the bowl.
  4. 04Fluff cooked quinoa with a fork and cool to room temperature.5 min
  5. 05Add quinoa to the bowl and stir well. Serve immediately or chill for about 1 hour.
