Mediterranean Salmon Sheet Pan Dinner

Ingredients
- balsamic vinegar
- 1/8 cup
- olive oil
- 1/8 cup
- garlic minced
- 3 cloves
- salt

- baby potatoes cut into quarters
- 1/2 lb
- salmon cut into 4 portions
- 8 oz
- fennel bulb thinly sliced
- 1 1/4 cups
- brussels sprouts halved
- 1 1/4 cups
- red onion cut into wedges
- 1/2 small
- feta cheese crumbled
- 1/4 cup
- parsley
- 1 tbsp
Method
- 01Preheat oven to 425°F. Line two baking sheets with parchment paper.
- 02Whisk balsamic vinegar, olive oil, garlic, and salt.
- 03Toss potatoes in one-third of the mixture and spread on one baking sheet.
- 04Bake potatoes for 15 minutes, stir, and return to oven.15 min
- 05Arrange salmon on the second baking sheet and drizzle with one-third of the balsamic mixture.
- 06Toss fennel, brussels sprouts, and red onion in remaining balsamic mixture and arrange around salmon.
- 07Bake for 12 to 15 minutes until everything is cooked through.15 min
- 08Sprinkle with feta cheese and parsley. Serve.
