Mediterranean Salmon Sheet Pan Dinner

Ingredients

balsamic vinegar

olive oil
1/4 cup
garlic minced

baby potatoes cut into quarters
1 lb
salmon cut into 4 portions

fennel bulb thinly sliced
2 1/2 cups
brussels sprouts halved
2 1/2 cups
red onion cut into wedges
1 small
feta cheese crumbled
1/2 cup
parsley
2 tbsp

Method

  1. 01Preheat oven to 425°F. Line two baking sheets with parchment paper.
  2. 02Whisk balsamic vinegar, olive oil, garlic, and salt.
  3. 03Toss potatoes in one-third of the mixture and spread on one baking sheet.
  4. 04Bake potatoes for 15 minutes, stir, and return to oven.15 min
  5. 05Arrange salmon on the second baking sheet and drizzle with one-third of the balsamic mixture.
  6. 06Toss fennel, brussels sprouts, and red onion in remaining balsamic mixture and arrange around salmon.
  7. 07Bake for 12 to 15 minutes until everything is cooked through.15 min
  8. 08Sprinkle with feta cheese and parsley. Serve.
