Ingredients

coconut milk light
3/8 (14 oz) can
strawberries fresh, roughly chopped
3/8 cup
vanilla extract
0.2 tsp
maple syrup
5/8 tbsp
chia seeds
1/8 cup

Method

  1. 01Blend coconut milk, strawberries, vanilla, and maple syrup on high until smooth.
  2. 02Taste and adjust sweetness as needed.
  3. 03Add chia seeds and pulse a few times to combine, scraping sides as needed.
  4. 04Transfer to a container and chill in the refrigerator for at least 2 to 4 hours, ideally overnight.2 hr
  5. 05Stir after 30 minutes if chia seeds aren't distributing evenly.
  6. 06Serve as is or topped with yogurt, coconut whipped cream, strawberry compote, crushed graham crackers, or granola.
