Strawberry Chia Pudding

Ingredients
- coconut milk light
- 0.8 (14 oz) can
- strawberries fresh, roughly chopped
- 0.8 cup
- vanilla extract
- 3/8 tsp
- maple syrup
- 1.2 tbsp
- chia seeds
- 1/4 cup
Method
- 01Blend coconut milk, strawberries, vanilla, and maple syrup on high until smooth.
- 02Taste and adjust sweetness as needed.
- 03Add chia seeds and pulse a few times to combine, scraping sides as needed.
- 04Transfer to a container and chill in the refrigerator for at least 2 to 4 hours, ideally overnight.2 hr
- 05Stir after 30 minutes if chia seeds aren't distributing evenly.
- 06Serve as is or topped with yogurt, coconut whipped cream, strawberry compote, crushed graham crackers, or granola.
