Banana Oatmeal Energy Bars

Ingredients
- bananas ripe, mashed
- 2 1/4 large
- rolled oats gluten free
- 1 1/2 cups
- peanut butter creamy, all natural
- 3/4 cup
- walnuts chopped
- 3/4 cup
- chocolate chips vegan
- 3/8 cup
- vanilla extract
- 3/4 tsp
- cinnamon
- 3/4 tsp
Method
- 01Preheat oven to 350°F. Grease a quarter sheet pan with cooking spray or coconut oil.
- 02Mash bananas with the back of a fork in a large bowl until broken down.
- 03Add oats, peanut butter, walnuts, chocolate chips, vanilla, and cinnamon. Stir until combined into a thick batter.
- 04Transfer batter to prepared sheet and pat into corners, sides, and top.
- 05Bake 25 to 30 minutes until fragrant, lightly browned on top, and set through.28 min
- 06Cool completely. Slice into 16 bars with one vertical cut and seven horizontal cuts.
