Ingredients
- cucumber coarsely grated
- 0.17 large
- Greek yogurt
- 1/3 cup
- olive oil
- 2/3 tbsp
- lemon zested and juiced
- 1
- garlic finely grated
- 1 cloves
- dill fresh
- 1/3 tbsp
- salt to taste
- 0.17 tsp
- black pepper to taste
- 0.08 tsp
Method
- 01Squeeze grated cucumber in a flour sack towel over a colander to remove excess moisture.
- 02Stir together cucumber, yogurt, olive oil, lemon zest, lemon juice, garlic, dill, salt, and pepper in a mixing bowl.
- 03Adjust consistency with olive oil or lemon juice if too thick. Taste and add more salt and pepper as needed.
- 04Serve chilled, garnished with fresh dill and a drizzle of olive oil.
