Method
- 01Preheat oven to 450°F.
- 02Grate sweet potatoes and wrap in paper towel to squeeze out excess moisture.
- 03Mix shredded sweet potato with melted coconut oil, salt, and pepper. Press into a pie dish to form crust.
- 04Cook bacon until crisp, then chop.
- 05Sauté onion and garlic until softened.
- 06Whisk eggs with salt and pepper.
- 07Layer bacon, onion mixture, tomatoes, and arugula in the sweet potato crust.
