Tomato Bruschetta

Ingredients

cherry tomatoes
1 1/2 cups
fresh basil thinly sliced into ribbons
1/4 ounce
kosher salt to taste
to taste
black pepper to taste
to taste
French baguette
1/2 loaf
extra virgin olive oil
1 1/4 tbsp
garlic minced
1 cloves
balsamic glaze
to taste

Method

  1. 01Heat 2 1/2 tbsp olive oil in a large pan over medium heat until shimmering.
  2. 02Add cherry tomatoes and cook undisturbed for 2 minutes until they begin to pop.
  3. 03Add minced garlic, season with salt and pepper, toss, and cook 2 minutes more, stirring occasionally, until tomatoes blister.
  4. 04Slice baguette diagonally into 1/2-inch slices and brush one side with olive oil.
  5. 05Heat a cast-iron pan or griddle over high heat. Arrange bread olive oil side down and toast until golden with darker edges, about 2 minutes.
  6. 06Brush top of bread with olive oil, flip, and toast the other side until golden, about 2 minutes.
  7. 07Transfer bread to a platter. Spoon blistered tomatoes onto each slice, top with basil ribbons and a drizzle of balsamic glaze.
  8. 08Serve immediately.
