Crockpot Potato Soup

- onions diced
- 1 1/3 cup
- carrots diced
- 1 1/3 cup
- celery diced
- 1 1/3 cup
- potatoes peeled and chopped into 1-inch pieces
- 5 1/3 cup
- vegetable broth
- 5 1/3 cup
- cheddar cheese grated
- 1 1/3 cup
- garlic powder
- 1 1/3 tsp
- rosemary fresh, chopped finely
- 1 1/3 tsp
- salt
- 2/3 tsp
- black pepper
- 2/3 tsp
- milk
- 2 2/3 cup
Method
- 01Heat olive oil in a sauté pan.
- 02Sauté onions, carrots, and celery until onions are translucent, about 10 minutes.10 min
- 03Add onions, carrots, celery, potatoes, broth, garlic powder, rosemary, salt, and pepper to the crockpot.
- 04Cook on high for 6 hours or low for 8 hours.8 hr
- 05Stir in milk and cheese.
- 06Blend with an immersion blender or regular blender until smooth.
- 07Serve with toppings like bacon, chives, or cheese.
