Curried Split Pea Soup

Ingredients
- green split peas
- 1 3/4 cups
- water
- 5 1/3 cups
- onion chopped
- 7/8 small
- celery chopped
- 2 stalks
- apple chopped
- 7/8 small
- ginger minced
- 7/8 tbsp
- yellow curry powder
- 1 1/3 tbsp
- black pepper
- 0.44 tsp
- cayenne
- 1/4 tsp
- salt to taste

- vegetable broth
- 2 1/4 cups
- coconut milk
- 7/8 can
- frozen peas
- 1 3/4 cups
- lemon juice
- 1/4 cup
- fresh cilantro
- 7/8 cup
- coconut oil
- as needed
Method
- 01Bring split peas and 6 cups water to a boil. Do not add salt. Simmer 30-40 minutes until tender. Drain excess water.40 min
- 02Meanwhile prep and chop onion, celery, apple, and ginger.
- 03Saute onion, ginger, celery, and apple in coconut oil until softened, about 3 minutes. Add cooked drained split peas, curry powder, black pepper, cayenne, salt, and broth. Simmer 20 minutes. Turn heat off.23 min
- 04Add coconut milk, frozen peas, and cilantro. Blend until smooth with a blender, food processor, or immersion blender. If you prefer more texture, reserve 2 cups soup and blend the rest, then combine and gently reheat to serve.
- 05Adjust lemon juice and salt to taste.
- 06Garnish with fresh cilantro and a drizzle of coconut cream or yogurt.
