Ingredients
- cottage cheeseblended smooth
- 3/8 cup3/8 cup
- all-purpose flourspooned and leveled, plus extra for dusting

- almond flour
- 1/8 cup1/8 cup
- baking powder
- 1 tsp
- sea salt
- 1/8 tsp
- egglarge, whisked
- 1 large1/2 tbsp ground flaxseed + 3 tbsp water
- everything bagel seasoning
- 1/2 tbsp
Veganblended firm tofu pressed and drainedpress first to remove excess moisture

Egg-freeflax eggmix and let sit 5 minutes before adding
Method
- 01Preheat oven to 400°F.
- 02Blend cottage cheese until smooth, scraping sides as needed.
- 03Whisk flour, almond flour, baking powder, and salt in a large bowl.
- 04Stir blended cottage cheese into dry ingredients until dough forms. Knead by hand about 2 minutes to incorporate remaining flour.
- 05Turn dough onto lightly floured surface and roll until no longer sticky.
- 06Divide dough into 4 equal pieces. Lightly roll each in flour.
- 07Roll one piece into a 7 to 8 inch log, connect ends, and press to form bagel shape. Repeat with remaining 3 pieces.
- 08Place bagels evenly spaced on parchment-lined baking sheet.
- 09Use fingers to widen bagel holes slightly to prevent closing during baking.
- 10Brush each bagel with whisked egg.
- 11Sprinkle with everything bagel seasoning if desired.
