  2. 02Blend cottage cheese until smooth, scraping sides as needed.
  3. 03Whisk flour, almond flour, baking powder, and salt in a large bowl.
  4. 04Stir blended cottage cheese into dry ingredients until dough forms. Knead by hand about 2 minutes to incorporate remaining flour.
  5. 05Turn dough onto lightly floured surface and roll until no longer sticky.
  6. 06Divide dough into 4 equal pieces. Lightly roll each in flour.
  7. 07Roll one piece into a 7 to 8 inch log, connect ends, and press to form bagel shape. Repeat with remaining 3 pieces.
  8. 08Place bagels evenly spaced on parchment-lined baking sheet.
  9. 09Use fingers to widen bagel holes slightly to prevent closing during baking.
  10. 10Brush each bagel with whisked egg.
