Chicken and Tomatoes

Ingredients
- chicken breasts cut into tenders
- 5 lb
- dried oregano
- 2 tsp

- 1 1/2 tsp
- black pepper

- oil
- 4 tbsp
- tomatoes cut into wedges
- 6 lb
- garlic minced
- 10 cloves
- basil finely chopped
- 1/2 cup
Method
- 01Cut chicken breasts into tenders. Sprinkle with oregano, salt, and pepper, toss to coat.
- 02Heat oil in a large skillet over medium heat. Sear half the chicken until golden brown on each side, about 5 minutes per side. Transfer to a plate and repeat with remaining chicken.
- 03Reduce heat to low. Add garlic and oregano, cook 1 minute, stirring frequently.
- 04Add tomatoes, sprinkle with salt and pepper. Increase heat to medium and simmer 5 minutes, tossing gently. If tomatoes aren't juicy, add a splash of water.
- 05Return chicken to skillet, nestling it among tomatoes. Sprinkle with basil and serve.
