Red Cabbage Salad with Crispy Scallions and Potato Sticks

Ingredients

red cabbage shredded
2 1/2 cups
carrot cut into matchsticks
1/2 medium
potato cut into matchsticks

scallion cut into thin strips
1
honey
1/4 tbsp
sesame oil
1/4 tsp
vegetable oil
1/2 tbsp
rice wine vinegar
3/4 tbsp
garlic powder
1/8 tsp
salt to taste
to taste
ground cumin
0.06 tsp
five spice powder
0.06 tsp
sesame seeds toasted
1/2 tbsp
cilantro chopped
1 tbsp

Method

  1. 01Combine cabbage and carrots in a large bowl.
  2. 02Rinse potato sticks in cold water to remove starch, then dry thoroughly with a kitchen towel.
  3. 03Rinse scallion strips in cold water and dry thoroughly.
  4. 04Fry scallions and potatoes in oil in a shallow pan until crisp, about 5 minutes. Drain on paper towels.
  5. 05Whisk honey, sesame oil, vegetable oil, rice wine vinegar, garlic powder, salt, cumin, and five spice powder.
  6. 06Toss dressing with cabbage and carrots.
  7. 07Transfer salad to a bowl and garnish with sesame seeds, cilantro, fried potatoes, and fried scallions.
