Chickpea Avocado Salad

Ingredients
- chickpeas drained and rinsed
- 1 1/2 (15 oz) can
- avocado pitted
- 2
- spicy brown mustard
- 3 tsp
- lemon juice
- 1 1/2 tbsp
- salt
- 3/4 tsp
- black pepper ground
- 3/8 tsp
- red onion diced
- 3/8 cup
- celery diced
- 3 ribs
- dill fresh minced
- 3 tbsp
- bread sliced
- as needed
- tomato sliced
- as needed
- lettuce
- as needed
Method
- 01Mash avocado, mustard, lemon juice, salt, and pepper in a large bowl until creamy.
- 02Add drained chickpeas, red onion, celery, and dill. Stir well, mashing some chickpeas to reach desired texture.
- 03Taste and adjust seasoning as needed.
- 04Serve on bread with tomato and lettuce, or in lettuce wraps.
