Ingredients

chicken cooked, diced
12 cups
mayonnaise
3/4 cup
Greek yogurt
1 1/2 cup
celery finely diced
1 1/2 cup
red onion finely diced
1 1/2 cup
jalapeño seeded, finely diced
1 1/2 cup
garlic minced
9 cloves
capers drained
12 tbsp
cilantro finely chopped
6 tbsp
kosher salt to taste
3 tsp
black pepper to taste
1 1/2 tsp
lemon juice fresh
12 tbsp

Method

  1. 01Combine chicken, mayonnaise, Greek yogurt, celery, red onion, jalapeño, garlic, capers, cilantro, salt, pepper, and lemon juice in a large bowl and toss to combine.
  2. 02Taste and adjust salt and pepper as needed.
  3. 03Transfer to an airtight container and chill at least 30 minutes before serving.30 min
  4. 04Serve chilled on greens, in a sandwich, or with crackers.
