Chicken Salad

Ingredients
- chicken cooked, diced
- 8 cups
- mayonnaise
- 1/2 cup
- Greek yogurt
- 1 cup
- celery finely diced
- 1 cup
- red onion finely diced
- 1 cup
- jalapeño seeded, finely diced
- 1 cup
- garlic minced
- 6 cloves
- capers drained
- 8 tbsp
- cilantro finely chopped
- 4 tbsp
- kosher salt to taste
- 2 tsp
- black pepper to taste
- 1 tsp
- lemon juice fresh
- 8 tbsp
Method
- 01Combine chicken, mayonnaise, Greek yogurt, celery, red onion, jalapeño, garlic, capers, cilantro, salt, pepper, and lemon juice in a large bowl and toss to combine.
- 02Taste and adjust salt and pepper as needed.
- 03Transfer to an airtight container and chill at least 30 minutes before serving.30 min
- 04Serve chilled on greens, in a sandwich, or with crackers.
