lentils drained and rinsed

chickpeas drained and rinsed

artichoke hearts medium diced
1/3 (14 oz) can
cherry or grape tomatoes quartered
1/3 cup
cucumber diced
1/3 cup
red bell pepper diced
1 medium
red onion diced

kalamata olives pitted and sliced
0.17 cup
fresh parsley finely chopped
0.17 cup

Method

  1. 01Whisk olive oil, vinegar, lemon juice, garlic, and mustard in a large bowl. Season with salt and pepper.
  2. 02Add lentils, chickpeas, artichoke hearts, tomatoes, cucumber, bell pepper, red onion, olives, and parsley. Mix well.
