Indonesian braised chicken
Ingredients
- chicken drumsticks

- salt

- neutral oil
- 3 tbsp
- ginger finely minced
- 3/4 tsp
- garlic chopped
- 5 cloves
- shallot finely diced
- 1/2 cup
- dried chili peppers

- 3 3/8 cup
- galangal powder
- 1 1/8 tsp
- coriander powder
- 1 1/8 tsp
- cloves ground or whole
- 1 1/8 tsp
- makrut lime leaves dried

- kecap manis
- 4 1/2 tbsp
- soy sauce
- 3 tbsp
- tamarind paste
- 1 1/2 tsp
- white pepper ground
- 3/4 tsp
Method
- 01Rub chicken drumsticks with salt and let sit 10 minutes.10 min
- 02Heat oil in a medium pot over medium-high heat. Sear chicken until lightly browned on all sides. Remove to a plate.
- 03Add ginger, garlic, shallot, and dried chili peppers to the pot. Cook until caramelized and fragrant.
- 04Add chicken stock and deglaze the pot. Stir in galangal, coriander, cloves, lime leaves, kecap manis, soy sauce, tamarind paste, and white pepper.
- 05Bring to a simmer. Add seared chicken and juices back to pot. Cook uncovered 25 minutes, turning chicken every 5 to 10 minutes. Skim foam as it rises.25 min
- 06Increase heat slightly and cook until sauce thickens enough to coat a spoon. Taste and add salt if needed.
