  1. 01Rub chicken drumsticks with salt and let sit 10 minutes.10 min
  2. 02Heat oil in a medium pot over medium-high heat. Sear chicken until lightly browned on all sides. Remove to a plate.
  3. 03Add ginger, garlic, shallot, and dried chili peppers to the pot. Cook until caramelized and fragrant.
  4. 04Add chicken stock and deglaze the pot. Stir in galangal, coriander, cloves, lime leaves, kecap manis, soy sauce, tamarind paste, and white pepper.
  5. 05Bring to a simmer. Add seared chicken and juices back to pot. Cook uncovered 25 minutes, turning chicken every 5 to 10 minutes. Skim foam as it rises.25 min
  6. 06Increase heat slightly and cook until sauce thickens enough to coat a spoon. Taste and add salt if needed.
