Soy-Glazed Chicken

  1. 01Cut chicken into bite-size pieces. Toss with cornstarch and salt.
  2. 02Whisk soy, mirin, brown sugar, vinegar.
  3. 03Heat oil in a large skillet over medium-high.
  4. 04Sear chicken in a single layer, undisturbed, 4 min. Flip, 3 min.
  5. 05Push chicken aside. Add garlic and ginger, 30 sec.
  6. 06Pour glaze in. Toss to coat, reduce until syrupy, 2 min.
  7. 07Top with scallions and sesame.
