- cornstarch
- 1 tbsp
- kosher salt

- neutral oil
- 1 tbsp
- garlicminced

- soy sauce
- 3 tbsp
- mirin

- brown sugar
- 2 tbsp
- rice vinegar

Method
- 01Cut chicken into bite-size pieces. Toss with cornstarch and salt.
- 02Whisk soy, mirin, brown sugar, vinegar.
- 03Heat oil in a large skillet over medium-high.
- 04Sear chicken in a single layer, undisturbed, 4 min. Flip, 3 min.
- 05Push chicken aside. Add garlic and ginger, 30 sec.
- 06Pour glaze in. Toss to coat, reduce until syrupy, 2 min.
- 07Top with scallions and sesame.
