Salmon Sushi Cups

Ingredients
- nori sheets cut into 3-4 inch squares
- 8 sheets
- cooked rice
- 4 cups
- canned salmon
- 24 oz
- mayo
- 1/2 cup
- sriracha
- 4 tsp
- sesame oil
- 2 tsp
- soy sauce
- 2 tsp
- lime juice fresh
- 2 tsp
- cucumber finely chopped
- 1 medium
- avocado chopped
- 2 medium
- sesame seeds
- to taste
- green onion chopped
- to taste
Method
- 01Preheat oven to 375°F.
- 02Press nori squares into muffin tin cups, one sheet per cavity.
- 03Fill each cup with 2 tbsp rice, pressing firmly to form a cup shape.
- 04Mix salmon, mayo, sriracha, sesame oil, soy sauce, and lime juice in a bowl.
- 05Spoon salmon mixture into each cup, drizzle with extra sriracha if desired.
- 06Bake until warm and crisp, about 10 minutes.10 min
- 07Top with cucumber, avocado, sesame seeds, and green onion. Drizzle with lime juice.
