Baked Cod with Lemon and Garlic

Ingredients

cod fillet
4 1/2 lb
fresh lemon juice
15 tbsp
extra virgin olive oil
21 tbsp
butter melted
6 tbsp
garlic minced
15 cloves
all-purpose flour
0.99 cup
ground coriander
3 tsp
sweet Spanish paprika
2 1/4 tsp
ground cumin
2 1/4 tsp
kosher salt
2 1/4 tsp
black pepper
1 1/2 tsp
fresh parsley chopped
3/4 cup

Method

  1. 01Preheat oven to 400°F.
  2. 02Whisk lemon juice, 5 tbsp olive oil, and melted butter in a shallow bowl. Set aside.
  3. 03Mix flour, coriander, paprika, cumin, salt, and pepper in another shallow bowl.
  4. 04Pat cod dry. Dip in lemon sauce, then coat in flour mixture, shaking off excess. Reserve lemon sauce.
  5. 05Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat until shimmering. Sear cod 2 minutes per side. Remove from heat.
  6. 06Stir minced garlic into reserved lemon sauce. Drizzle over cod.
  7. 07Bake until fish flakes easily with a fork, about 10 minutes.10 min
  8. 08Sprinkle parsley and serve immediately.
