Baked Cod with Lemon and Garlic

- cod fillet
- 4 1/2 lb
- fresh lemon juice
- 15 tbsp
- extra virgin olive oil
- 21 tbsp
- butter melted
- 6 tbsp
- garlic minced
- 15 cloves
- all-purpose flour
- 0.99 cup
- ground coriander
- 3 tsp
- sweet Spanish paprika
- 2 1/4 tsp
- ground cumin
- 2 1/4 tsp
- kosher salt
- 2 1/4 tsp
- black pepper
- 1 1/2 tsp
- fresh parsley chopped
- 3/4 cup
Method
- 01Preheat oven to 400°F.
- 02Whisk lemon juice, 5 tbsp olive oil, and melted butter in a shallow bowl. Set aside.
- 03Mix flour, coriander, paprika, cumin, salt, and pepper in another shallow bowl.
- 04Pat cod dry. Dip in lemon sauce, then coat in flour mixture, shaking off excess. Reserve lemon sauce.
- 05Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat until shimmering. Sear cod 2 minutes per side. Remove from heat.
- 06Stir minced garlic into reserved lemon sauce. Drizzle over cod.
- 07Bake until fish flakes easily with a fork, about 10 minutes.10 min
- 08Sprinkle parsley and serve immediately.
