  1. 01Combine mayo, ketchup, relish, mustard, vinegar, and salt in a small bowl. Cover and refrigerate at least 30 minutes.30 min
  2. 02Pulse black beans in a food processor until mashed. Transfer to a bowl and add panko, egg, miso, salt, paprika, and garlic powder. Stir until combined and set aside 20 minutes.
  3. 03Heat avocado oil in a griddle or cast-iron pan over medium heat. Add onion and cook, stirring occasionally, until tender and starting to brown, 14 to 16 minutes. Transfer to a small bowl.
  4. 04Return griddle to medium heat and drizzle liberally with avocado oil. Wet your hands and form bean mixture into eight balls slightly larger than golf balls.
  5. 05Place a bean ball on the hot griddle. Lay parchment paper on top and press with the back of a spatula and your hand until the patty is flat and 1/4 inch thick. Repeat with as many patties as fit, working in batches.
  6. 06Cook patties 2 to 3 minutes on each side, adding oil as needed to maintain a thin frying layer. Once the bottom is brown and crisp, flip and add a slice of cheddar. Cook until the second side is brown and crisp.
  7. 07Lightly toast the buns on the griddle. Spread sauce on the bottom bun, then layer with two patties, lettuce, tomato, onions, and pickles if desired. Spread sauce on the top bun and add to the burger.
