Vegetable Fajita Tacos

- bell peppers thinly sliced

- red onion thinly sliced

- 6 cloves
- black beans drained and rinsed
- 3 (15 oz) can
- vegetable oil

- taco seasoning
- 6 tbsp
- corn tortillas
- 24 tortillas
- lime
- 3
- fresh cilantro minced

Method
- 01Rinse, dry, and thinly slice peppers and onion. Mince garlic.
- 02Heat oil in a large skillet over medium-high. Add peppers, onion, garlic, and taco seasoning. Sauté until tender, stirring often, about 10 minutes.10 min
- 03Stir in black beans and cook 1 to 2 minutes until warmed through.
- 04Toast corn tortillas in a skillet over medium heat, about 30 seconds per side.
- 05Assemble tacos by filling tortillas with fajita mixture. Top with lime juice and cilantro.
