Ingredients

bell peppers thinly sliced
1 medium
red onion thinly sliced
1/2 medium
garlic minced
1 cloves
black beans drained and rinsed
1/2 (15 oz) can
vegetable oil
1 tbsp
taco seasoning
1 tbsp
corn tortillas
4 tortillas
lime
1
fresh cilantro minced
to taste

Method

  1. 01Rinse, dry, and thinly slice peppers and onion. Mince garlic.
  2. 02Heat oil in a large skillet over medium-high. Add peppers, onion, garlic, and taco seasoning. Sauté until tender, stirring often, about 10 minutes.10 min
  3. 03Stir in black beans and cook 1 to 2 minutes until warmed through.
  4. 04Toast corn tortillas in a skillet over medium heat, about 30 seconds per side.
  5. 05Assemble tacos by filling tortillas with fajita mixture. Top with lime juice and cilantro.
