red lentils rinsed
2 cup
red curry paste
2 tbsp
maple syrup
2 tbsp
soy sauce
2 tbsp
lime juice
4 tsp
vegetable broth low sodium
4 1/2 cups
cilantro fresh
to taste

Method

  1. 01Heat olive oil in a pot on medium-high heat. Add onion, ginger, and garlic, cook 2 minutes.
  2. 02Add carrot and celery, cook 5 minutes until tender.5 min
  3. 03Add lentils, red curry paste, maple syrup, soy sauce, lime juice, and vegetable broth. Stir to combine.
  4. 04Bring to a boil, then reduce heat to low and simmer 15 to 20 minutes until lentils are tender.18 min
  5. 05Serve with fresh cilantro.
