Red Lentil Curry

- celery chopped

- carrot finely chopped

- red lentils rinsed
- 1 1/3 cup
- red curry paste
- 1 1/3 tbsp
- maple syrup
- 1 1/3 tbsp
- soy sauce
- 1 1/3 tbsp
- lime juice
- 2 2/3 tsp
- vegetable broth low sodium
- 3 cups
- cilantro fresh
- to taste
Method
- 01Heat olive oil in a pot on medium-high heat. Add onion, ginger, and garlic, cook 2 minutes.
- 02Add carrot and celery, cook 5 minutes until tender.5 min
- 03Add lentils, red curry paste, maple syrup, soy sauce, lime juice, and vegetable broth. Stir to combine.
- 04Bring to a boil, then reduce heat to low and simmer 15 to 20 minutes until lentils are tender.18 min
- 05Serve with fresh cilantro.
