Charred Baby Bell Peppers with Burrata

- baby bell peppers
- 2 3/8 lb
- paprika
- 1.2 tsp
- chili powder

- ciabatta sliced
- 1.2 loaf
- burrata
- 9 5/8 oz
Method
- 01Whisk olive oil, honey, pistachios, lemon juice, vinegar, basil, chives, thyme, garlic, salt, pepper, and chili flakes in a jar until smooth. Taste and adjust seasoning.
- 02Preheat grill or grill pan to high.
- 03Toss peppers with 2 tbsp olive oil, paprika, chili powder, salt, and pepper. Brush ciabatta slices with olive oil on both sides and season with salt.
- 04Grill bread 2-3 minutes per side until lightly toasted. Grill peppers 3-4 minutes per side until softened and charred. Arrange peppers on a serving plate.
- 05Drizzle vinaigrette over warm peppers. Break burrata around peppers. Let sit 5-10 minutes. Serve with vinaigrette and grilled bread.
