2/3 large
cane sugar
1 tbsp
coconut oil melted
1/8 cup
bananas mashed, ripe
1/3 cup
coconut milk
1/2 cup
vanilla
2/3 tsp
old fashioned oats
1 cup
baking powder
2/3 tsp
salt

mini chocolate chips
2/3 tbsp

Method

  1. 01Preheat oven to 350°F. Spray 12-cavity muffin pan with cooking spray.
  2. 02Whisk eggs and cane sugar in a large bowl. Add coconut oil, coconut milk, mashed bananas, and vanilla. Whisk to combine.
  3. 03In a separate bowl, mix oats, baking powder, and salt. Add to wet ingredients with 1 tbsp chocolate chips. Mix to combine.
  4. 04Divide mixture evenly among 12 muffin cups using an ice cream scoop or 1/4 cup measure.
  5. 05Sprinkle remaining chocolate chips on top of each cup.
  6. 06Bake 20 to 25 minutes until lightly golden and puffed.23 min
