- large shrimp peeled
- 1/2 lb
- eggs
- 1 large
- unsweetened coconut flaked
- 1/2 cup
- panko breadcrumbs
- 1/4 cup
- all-purpose flour
- 1/4 cup
- garlic powder
- 1/4 tsp
- paprika
- 1/4 tsp
- salt
- to taste
- pepper
- to taste
- oil
- for greasing
Method
- 01Preheat oven to 425°F. Grease a baking sheet with oil.
- 02Beat eggs in a small bowl. Combine panko and coconut in another bowl. Mix flour, garlic powder, paprika, salt, and pepper in a third bowl.
- 03Working in batches, dip shrimp in flour mixture, then egg, then coconut mixture, pressing to adhere.
- 04Arrange shrimp in a single layer on the baking sheet. Lightly spray with oil.
